FRASER BELL COOKIES - Coconut Macaroons
While traveling on the beautiful Island of Domnica recently, we were treated to wonderful fresh coconut. The islanders prepare it with brown sugar or molasses and serve it with roasted coccoa beans. The combination of the bitter chocolate paired with the super sweet coconut mixture leaves you just wanted to take a fork and dig in!

So when I got home from vacation I went straight to work and created a chocolate chip coconut macaroon to remind me of my vacation!

Ingredients
Directions
- Heat oven to 300 degrees. In a medium bowl, whisk egg whites and salt until frothy, about 2 minutes. Stir in condensed milk and vanilla. Using a rubber spatula, fold in coconut until well combined.
- Line 2 baking sheets with parchment paper or nonstick baking mats. Using a teaspoon and your fingers, form macaroons into 1 1/4-inch mounds about 1 inch apart.
- Bake until macaroons are golden brown, about 20 minutes. Transfer baking sheets to a cooling rack; let cool completely. Store in an airtight container for up to a week.
- You can also make Icearoon ice cream sandwiches by spooning ice cream onto the bottom of one macaroon and topping with another macaroon.

Emerald Falls - Dominica The loveliest place on earth!
I was lucky enough to swim in this fresh water "Emerald Pool" in Dominica. They say when you swim in the water, you come out 10 years younger - I went in 3X! |

Getting ready to run a Half Marathon
Really because I have no desier to run a full marathon and half makes me feel like the warrior that I am not!
Here's the plan - I have 8 weeks left and I'm at the 5K mark now (a bit behind the 8 ball, but so be it).
Weekly Routine:
3 days of rest, 3-4 days of running
Weekly Mileage:
13-23 miles
Long Runs:
start at 5 miles, peak at 10 miles
Speedwork:
strides, half marathon goal-pace runs (HMP)
I'm exhausted just thinking about it all-
I'll hit the hot-tub before I run!

MY MOM Said what???
So in a recent conversation with my mom.....................
It went like this
Mom: "So I met this guy and his name is Jim Egan, so I told him my name is Kay Egan"
Me: "Interesting, how old of a guy is he?"
Mom: "He's Married!"
Me: "You don't say! How old of a guy do you think he is?"
Mom: "He's Married!"
Me: "Yeah, I got that. How old do you think he is?"
Mom: (louder and slower now) "H E ' S M A R R I E D!"
Me: "Yes Mom, I heard, but I'm asking how old he is"
Mom: (even more louder and slower) "H E ' S M A R R I E D!"
Me: "Yes, I'm married too, I don't care - I just wanted to know how old he is because I know someone named Jim Egan and I thought it might be the same guy"
Mom: Oh, well this guy is "MARRIED"!
(This could go on all night)

We've been busy
Sorry - you have probably noticed we've been too busy to post lately. My Father-In-Law has been ill, so we have been spending some time in Florida with him.
